Mediterranean Breakfast - Pan Tomaca with Basil

After spending almost two years in Spain and having a Spanish girlfriend, the Mediterranean influence has taken its toll. Here is a great recipe for a typical Spanish breakfast with a slight adaptation of adding basil for extra taste and cottage cheese or cooked meat for extra protein.
Ingredients
1-2 tomatoes
Small handful of basil leaves
1-2 dessert spoons of olive oil
Salt
Pepper
Put it all in a blender or food processor...

and voila, ready to spread onto your wholemeal toast with your favourite cooked meat or cottage cheese...
